Mussels in white wine&parsley

Mussel dishes might give you an impression of very complicated cooking involved but that’s an absolute delusion. Easy & Quick to make, you would be surprised how little it takes to make a refined dinner. Intrigued? You’d need: 1 kg of mussels, in shells small glass of white wine some olive oil 1 shallot, finely chopped 2 cloves of garlic, minced chopped parsley, to serve DIRECTIONS: Start off, with preparing your mussels for cooking. You can watch a great video guide from seafood expert Rick Stein how to clean and prepare mussels here. Once your mussels are ready for cooking, rush to serve the table, as dinner will be ready in minutes! The countdown goes by taking a large pan and drizzling over some olive oil and adding chopped shallot and minced garlic. Cook those until soft, but not browned. PINK but not dangerous Russian salad or “My Dressed herring”

This fun looking salad is one of the must have dishes on the New Year’s eve table for nearly every Russian family. It is also known as shuba or seledka pod shuboi (cеледка под шубой in Cyrillic), and is basically a layered salad made of diced pickled herring coated with chopped boiled vegetables and covered with mayonnaise. There are numerous variations of this recipe and all of them are fantastic! And today I want to share my version of Dressed herring. Traditional recipes use a lot of Mayo and eggs, however, I prefer it to be more light, so instead of having eggs, I mix in some apples for additional crunch. I hope you will like it! INGREDIENTS: 2 fillets of pickled herring in oil, chopped 2 large boiled potatoes, cooled, peeled and finely chopped 3 large carrots, cooled, peeled and shredded 2 large beets boiled, cooled, peeled and shredded (alternatively, you can buy pre-boiled beets) 1/2 of medium onion, finely chopped 2 apples, grated 1 cup of mayonnaise Black pepper Parsley or dill for garnish (optional) CREATING PINK …

Always classy, easy to make, gorgeous and great starter for any party! Even if you think you don’t like mushrooms, you still should give these a try – it’s absolute deliciousness in a bite-size cup simply melting in your mouth. To rock the party, you would need: 24 medium white button mushrooms, cleaned and stems reserved 1/2 cup of cream cheese Some Camembert cheese, cut into slices 2 tbsp. of extra-virgin olive oil, plus more for the baking sheet Half of large onion, finely chopped 1 cloves of garlic, minced Salt and freshly ground black pepper Almonds for decoration (optional) DIRECTIONS: Start with preheating oven to 180 C and lightly oil a baking sheet. After that, hands on the mushrooms, remove stems and chop them finely. Bake just the mushroom caps, stem-side down, until tender, around 10 minutes. Meanwhile, take a medium skillet and sauté onion and garlic in olive oil, add some chopped mushrooms, salt and freshly ground black pepper, cook until tender. Divine taste of Italy: Oven roasted bell peppers

If it is another rainy day outside your window, spice it up with some deliriously wonderful dish, which will take you back to the sunny streets of Italy. It is simple and delicious. Works great on it’s own, and can be gorgeous savoury addition to any salads, salsas or stews. Divine taste of Italy: Oven roasted bell peppers Preparation+Cooking time: 1 h / Veg-friendly To celebrate you would need: 4 bell peppers (red, orange or yellow) 2 tbsp. of extra-virgin olive oil Some salt and freshly ground black pepper 2 garlic cloves, finely sliced Some dried oregano DIRECTIONS: Pre-heat oven to 200 C. Then de-seed and cut the peppers into halves or quarters and place them on a baking sheet. Drizzle the goodness with olive oil, add finely chopped garlic and season with salt and pepper. Lastly, sprinkle some dried oregano. Roast until flesh is tender and skin is blistered,  should take approximately 35-40 minutes. Mmmm..fantastico! With love, Marie  

Awesome pumpkin&carrot cream soup

I was raised with the idea that his majesty soup is one of the essentials of the dinner table. Naturally, I had tasted a huge amount of different soups, but this one, I have to tell you, is absolute goodness! The trick for the rich taste and silky texture is in roasting our lovely veggies. So, are you ready for the feast? We would need: 1 kg of pumpkin or butternut squash Some olive oil 1 large onion 3 cloves of garlic 2 carrots 1 stick of celery 1 litre of hot vegetable stock Seasoning (chilli pepper flakes, coriander, cumin) Some dried rosemary (optional) DIRECTIONS: Start with pre-heating the oven to 170°C. Peel, de-seed and chop pumpkin into wedges and place them on the baking tray. Drizzle over a little olive oil and add some salt and pepper to your liking. I also like to add some rosemary. Roast the pumpkin for about 1 hour, until soft and a bit caramelised on the edges. Chop the onion, garlic, carrots and celery. Use a large saucepan to heat …

Breakfast ideas: delicious and healthy treat – Yoghurt Parfait

Great morning can boost the mood for the rest of the day, and one of the essential parts of the great mornings is GREAT breakfast. Worry not if you don’t have lots of spare time before work or school, this beauty takes only few minutes to prepare and it can’t get more easy than this. You can mix & match your favourite flavours and treat yourself, your family and friends with healthy, yummy and amazing-looking breakfast. Incredibly easy and fun to make, these beautiful babies will be a centre piece of any party. To be a baker-wizard all you need is: For Dough: 125 g  of self-raising flour 1 tsp  of baking powder 125 g  of soft butter 125 g  of caster sugar 2 large eggs For Cream cheese glaze: 110 g Cream cheese, room temperature 120 g of caster sugar 1/4 cup of Butter, room temperature 1/2 Tsp Vanilla extract bits of 1 orange zest (optional) For Toppings: A handful of berries (raspberries, blueberries, strawberries). My first conscientious rendezvous to the kitchen happened when I was about 15 years old. Surely I have seen my grandmother & mother busy juggling of pots and occasionally even helped them out, but the big fascination for the kitchen magic occurred to me years later. It is truly amazing how some simple Tips&Tricks can help you get off on the right foot in the kitchen and whip up a delicious dinner. Here are some of my AHA!-moments: Keep your kitchen clean The kitchen is the heart and center of the home but usually gets dirty fast. If you have dishes piled up in the sink, most likely you won’t be really in the mood to cook a fresh meal. Everyone knows how tiring deep-cleaning marathons over the weekend can be, just make sure you spent a few moments to clean your kitchen every day, so it is fresh every time you use it.
