Magnificent Egg Clouds

I dumped meat years ago, though some of my treasured summer moments have involved shashlyki (skewered meat cooked on a grill next to the lake or forest in a company of friends or family).  Nonetheless it was relatively easy breakup for me – for one thing sure, I couldn’t go completely vegan as eggs & dairy, especially cheese, kept me tight. I love eggs too.  For their simplicity and yet limitless possibilities with egg-based dishes. Like this dreamy delicious egg-treat with whole creamy yolks and a cloud of egg whites baked to perfection. If you keep a good relationship with meat – you can also mix in some cooked breakfast sausage or bacon, for the rest of us – sautéed onion & fresh herbs will make an excellent choice. Winter treat: Creamy prawn gratin

A delicious creamy oven bake inspired by home-holidays-nostalgia. Rich, good-hearty starter, which makes it almost a petit dîner. Preparation + cooking time: 25-30  min / Serves 4  We would need: 2  tsp. of butter 1 onion, finely chopped 100 g prawns 5 crab sticks Parsley (optional) For sauce: 1 tsp. of butter 1 tsp. of flour 1 cup of milk salt & pepper to the taste 1 tsp. of soya sauce Few drops of Tabasco sauce 4 tsp. of grated cheese DIRECTIONS:  Melt the butter in a saucepan and over medium heat cook onion until transparent. Cut crab sticks and prawns into small pieces and add to the saucepan. Cook for another 2-3 minutes.  For sauce: In a new pot melt the butter over low heat, then stir in the flour. Cook for about 1 minute constantly stirring. Slowly add the milk. Cook for another 1-2 minutes. Use a whisk to create a smooth sauce. Lastly, add salt&pepper, a spoon of soya sauce and few drops of Tabasco sauce. Stir until the sauce is completely smooth and thickened. Pour …

Chocolate-chip cookies

Cookies are my favourite food gifts, wrapped in a paper bag and tied with a ribbon, they will surely make someone’s special day better. Meet my mini-cake cookies,  thin & crispy on the outside, filled with tasty bits of  dark chocolate and most importantly, extremely easy-to-make. If chocolate is not your thing, you can experiment with a whole world of different flavours. Roasted nuts and dried fruit will definitely make a nice twist. Makes about 25-30 cookies We would need: 250 g of butter, diced 1 cup of golden caster sugar 2 eggs ½ teaspoon vanilla extract 2 and ½ cups of flour 1 tsp. of baking powder a pinch of  fine sea salt 150 g of quality chocolate (milk or dark)   DIRECTIONS: Beat together the butter and sugar until smooth and creamy. Add in the eggs one at a time and stir in the vanilla extract. Sift in the flour, add a baking powder and a pinch of salt. Stir well. Lastly, roughly chop and stir in the chocolate. Breakfast ideas: avocado & egg

You might say that warm avocado might seem like a bad idea, however, I think, it is worth to try at least once. You might be surprised, but beautiful creamy avocado and baked egg remarkably go well together. It’s fast&easy to make and surely is a good option to start your day with. Preparation + cooking time:  ~15 min/ Serves 2 We would need: 2 medium sized avocados 4 free-range eggs fine sea salt & black pepper   DIRECTIONS: Preheat the oven, Gas mark 4/350 °F/ 180 °C. Halve the avocados and remove the pit, scoop a little extra of the flesh out in order to fit in the egg. Crack an egg into the avocado half and season to your taste. Bake roughly for 15 min, or until the white is opaque and the yolk is done to your liking. Serve with a diced tomatoes, sauces, and a few toasts. Bon app! With love, Marie  

Delicious Focaccia bread with cherry tomatoes

I am absolutely in love with Italian food and focaccia bread is a beautiful superb accompaniment to go with it. It looks great, it tastes amazing and what’s important is super-easy to make. See for yourself! Preparation + cooking time:  over 2 hours We would need: 500 g of strong white bread flour 1 sachet of dried yeast 400 ml of lukewarm water fine sea salt olive oil Handful of cherry tomatoes Italian herbs Leftover cheese (optional)   DIRECTIONS: Place the flour into a large bowl, add 2 tbsp of salt and make a well in a middle. Fill it with the lukewarm water, add the yeast. Allow few minutes for the yeast to melt, then mix the entire content to make a soft, slightly sticky dough. Take a baking pan and drizzle some olive oil to the bottom. Pour the dough into the pan and spread it evenly. Cut the tomatoes and assemble them over the top. Wonderful smoked salmon&green beans savoury tart with Parmesan crust

Rich and tender pastry along with a melange of harmonious savoury flavours…a real treat! Sliced up and served with a salad makes it a delightful main course for your weekday suppers or even family get-togethers. I am so excited to share this recipe with you! INGREDIENTS: 250 g of wheat flour 1 tsp. of baking powder 100 g of butter, cold and diced; and some more for baking 5 tbsp. of cold water 1 medium onion 100 g of green beans 100 g of smoked salmon 2 eggs 75 g of Parmesan cheese Salt and pepper to the taste Some tomatoes (for garnishing) DIRECTIONS: First the pastry: Sift the flour into a large bowl, add baking powder and a good pinch of salt along with the diced butter. Irresistible banana&chocolate cake

Banana&Chocolate a match made in heaven. This easy-to-make cake embodies all that – and then some more. A dense, dark and devilishly delicious, it will be gone before you know it. For perfect dessert you will need: 2 ripe bananas, mashed 100 g of dark chocolate, melted 150 g of butter, room temperature 120 g of  caster sugar 3 free-range eggs 175 g of plain flour 3 g of baking powder 1 tbsp. of vanilla extract 1 tbsp. of orange juice (optional) Tiny bits of orange peel for garnishing (optional)     DIRECTIONS This recipe consists of few easy-to-follow stages: 1. Heavenly mushroom and zucchini omelette

Each and every one of us have their own little favourite thing to do, something which we always look forward to. For a number of years, for me such thing is a Sunday morning “royal” breakfast. It is not just a regular meal, it is rather a time-spending when you can slow down and relax, prepare something amazing and share it with your family and friends. And today’s the star of the table is this beautiful mushroom&zucchini omelette. Elegant and easy-to-make, it will make a great entrance for any lavish breakfast table. You would need: 8 eggs 300 g of zucchini, cubed 150 g of button mushrooms, sliced 50 g of parmigiana cheese, grated 150 g of mozzarella or feta cheese, sliced 2 medium onions, chopped Some salt and pepper (to taste) Some olive oil DIRECTIONS: Start off with slicing zucchini into a small cubes, chopping the onions and mushrooms Heat the oil in non stick pan, add the vegetables and cook until they are soft and start turning golden. Summer delight: Tomato cottage cheese tart

This is one of the most delicious tarts around, as it combines two of my favourites: tomatoes and savoury pastry. Rich in flavour, joyful and easy-to-prepare. Once made, it will constantly reappear on your dinner table. For the amazing tart we would need: 250 g of wheat flour 5 tbsp. of cold water 100 g of butter, cold and cubed. Plus some more for baking pan 1 tsp. of baking powder 3 free-range eggs 400 g of fresh tomatoes 300 g of cottage cheese Some salt and freshly ground black pepper Some rosemary (optional) DIRECTIONS: 1. To make the pastry, sift the flour into a bowl, add baking powder and a good pinch of salt, then add the cubed butter and about 4-5 tablespoons of water. Mix continuously until it comes together to form a rough dough, you can also add more water if needed.  Shape the dough and on floured surface roll it into a disk. 2. Divine taste of Italy: Oven roasted bell peppers

If it is another rainy day outside your window, spice it up with some deliriously wonderful dish, which will take you back to the sunny streets of Italy. It is simple and delicious. Works great on it’s own, and can be gorgeous savoury addition to any salads, salsas or stews. Divine taste of Italy: Oven roasted bell peppers Preparation+Cooking time: 1 h / Veg-friendly To celebrate you would need: 4 bell peppers (red, orange or yellow) 2 tbsp. of extra-virgin olive oil Some salt and freshly ground black pepper 2 garlic cloves, finely sliced Some dried oregano DIRECTIONS: Pre-heat oven to 200 C. Then de-seed and cut the peppers into halves or quarters and place them on a baking sheet. Drizzle the goodness with olive oil, add finely chopped garlic and season with salt and pepper. Lastly, sprinkle some dried oregano. Roast until flesh is tender and skin is blistered,  should take approximately 35-40 minutes. Mmmm..fantastico! With love, Marie
