Blissfully delicious: Coconut milk pancakes

A fun twist on pancakes: these fluffs are made with coconut milk and served on a bed of black cherry home-made jam, topped with maple syrup drizzle. A soft sweet piece of heaven. Preparation + cooking time: 15- 20 min / Serves 2 We would need: 1 ½ cup of plain flour 1 heaped tablespoon of baking powder a pinch of salt 1 ripe banana, mashed 2 eggs 1 cup of coconut milk a little oil or butter for greasing the pan DIRECTIONS: In a large bowl, combine together flour, baking powder and pinch of salt. Make a well in the center, add mashed banana, eggs & coconut milk. Whisk to a smooth batter. Cook on a non stick pan over medium heat for about 1-2 minutes per side. Serve hot with jam, syrup or whipped cream if you like. Bon app! Pretty in Pink: Raspberry & Banana pudding

“You eat with your eyes first”, I bet most of you have heard this expression at least couple of times before. Good news there are plenty of ways to make all your senses happy. Whizz your gorgeous pink breakfast for a good morning start. Silky with a nutty spin, accompanied by bits of dark chocolate and a hint of mint. Delicious!  I must say – it’s super easy to make,  and my family loves it. Preparation time: under 5 min / A petit treat for 2/ Veg-friendly We would need: 1 medium banana, sliced Handful of raspberries 3 tsp. of nut granola 1 tsp. of honey 1/2 cup of almond milk (can substitute by  regular milk, soy or rice milk) Topping: Add berries, fruit, nuts&seeds, whatever you like. On the picture: banana slices, raspberries, goya seeds, bits of dark chocolate, almond flakes and mint leaves. DIRECTIONS: In a blender combine banana, raspberries, granola, honey and almond milk.
