Chocolate-chip cookies

Cookies are my favourite food gifts, wrapped in a paper bag and tied with a ribbon, they will surely make someone’s special day better. Meet my mini-cake cookies,  thin & crispy on the outside, filled with tasty bits of  dark chocolate and most importantly, extremely easy-to-make. If chocolate is not your thing, you can experiment with a whole world of different flavours. Roasted nuts and dried fruit will definitely make a nice twist. Makes about 25-30 cookies We would need: 250 g of butter, diced 1 cup of golden caster sugar 2 eggs ½ teaspoon vanilla extract 2 and ½ cups of flour 1 tsp. of baking powder a pinch of  fine sea salt 150 g of quality chocolate (milk or dark)   DIRECTIONS: Beat together the butter and sugar until smooth and creamy. Wonderful smoked salmon&green beans savoury tart with Parmesan crust

Rich and tender pastry along with a melange of harmonious savoury flavours…a real treat! Sliced up and served with a salad makes it a delightful main course for your weekday suppers or even family get-togethers. I am so excited to share this recipe with you! INGREDIENTS: 250 g of wheat flour 1 tsp. of baking powder 100 g of butter, cold and diced; and some more for baking 5 tbsp. of cold water 1 medium onion 100 g of green beans 100 g of smoked salmon 2 eggs 75 g of Parmesan cheese Salt and pepper to the taste Some tomatoes (for garnishing) DIRECTIONS: First the pastry: Sift the flour into a large bowl, add baking powder and a good pinch of salt along with the diced butter. Summer delight: Tomato cottage cheese tart

This is one of the most delicious tarts around, as it combines two of my favourites: tomatoes and savoury pastry. Rich in flavour, joyful and easy-to-prepare. Once made, it will constantly reappear on your dinner table. For the amazing tart we would need: 250 g of wheat flour 5 tbsp. of cold water 100 g of butter, cold and cubed. Plus some more for baking pan 1 tsp. of baking powder 3 free-range eggs 400 g of fresh tomatoes 300 g of cottage cheese Some salt and freshly ground black pepper Some rosemary (optional) DIRECTIONS: 1. To make the pastry, sift the flour into a bowl, add baking powder and a good pinch of salt, then add the cubed butter and about 4-5 tablespoons of water. Mix continuously until it comes together to form a rough dough, you can also add more water if needed.  Shape the dough and on floured surface roll it into a disk. 2. To be a baker-wizard all you need is: For Dough: 125 g  of self-raising flour 1 tsp  of baking powder 125 g  of soft butter 125 g  of caster sugar 2 large eggs For Cream cheese glaze: 110 g Cream cheese, room temperature 120 g of caster sugar 1/4 cup of Butter, room temperature 1/2 Tsp Vanilla extract bits of 1 orange zest (optional) For Toppings: A handful of berries (raspberries, blueberries, strawberries). Alternatively, you can use zest of an orange or chocolate flakes. DIRECTIONS: Start with pre-heating the oven to 180 C. After, prepare the bun tray with cupcake cases.
