Chocolate-chip cookies

Cookies are my favourite food gifts, wrapped in a paper bag and tied with a ribbon, they will surely make someone’s special day better. Meet my mini-cake cookies,  thin & crispy on the outside, filled with tasty bits of  dark chocolate and most importantly, extremely easy-to-make. If chocolate is not your thing, you can experiment with a whole world of different flavours. Roasted nuts and dried fruit will definitely make a nice twist. Makes about 25-30 cookies We would need: 250 g of butter, diced 1 cup of golden caster sugar 2 eggs ½ teaspoon vanilla extract 2 and ½ cups of flour 1 tsp. of baking powder a pinch of  fine sea salt 150 g of quality chocolate (milk or dark)   DIRECTIONS: Beat together the butter and sugar until smooth and creamy. Irresistible banana&chocolate cake

Banana&Chocolate a match made in heaven. This easy-to-make cake embodies all that – and then some more. A dense, dark and devilishly delicious, it will be gone before you know it. For perfect dessert you will need: 2 ripe bananas, mashed 100 g of dark chocolate, melted 150 g of butter, room temperature 120 g of  caster sugar 3 free-range eggs 175 g of plain flour 3 g of baking powder 1 tbsp. of vanilla extract 1 tbsp. of orange juice (optional) Tiny bits of orange peel for garnishing (optional)     DIRECTIONS This recipe consists of few easy-to-follow stages: 1. In a bowl or food mixer mash the bananas. 2. Melt the chocolate. Since I don’t have a double-boiler and prefer not to use micro-wave as it is very easy to ruin the chocolate, I simply melt it in a pot. My first conscientious rendezvous to the kitchen happened when I was about 15 years old. Surely I have seen my grandmother & mother busy juggling of pots and occasionally even helped them out, but the big fascination for the kitchen magic occurred to me years later.
