Magnificent Egg Clouds

I dumped meat years ago, though some of my treasured summer moments have involved shashlyki (skewered meat cooked on a grill next to the lake or forest in a company of friends or family).  Nonetheless it was relatively easy breakup for me – for one thing sure, I couldn’t go completely vegan as eggs & dairy, especially cheese, kept me tight. I love eggs too.  For their simplicity and yet limitless possibilities with egg-based dishes. Like this dreamy delicious egg-treat with whole creamy yolks and a cloud of egg whites baked to perfection. If you keep a good relationship with meat – you can also mix in some cooked breakfast sausage or bacon, for the rest of us – sautéed onion & fresh herbs will make an excellent choice. Radish garden salad with a cranberry spin

A lovely light starter with fantastic sweet&salty flavours. Easy to toss together, and is everything salad should be – fresh and crunchy.  Tried, loved and adopted from my mom’s kitchen. Preparation time: under 10 minutes / Serves 2 / Veg-friendly We would need: 2 handfuls of mixed greens (crisp romaine, baby spinach, rocket works well) 1 small cucumber, peeled lengthways into ribbons 4 radishes, ends trimmed, thinly sliced 1 tbsp. of freshly chopped chives 1 tbsp. of freshly chopped dill Salt & pepper to taste a pinch of roasted sesame seeds (optional) For the dressing: 1 tbsp. of cranberry jam 1 tbsp. of light soy sauce 1 tbsp. of water DIRECTIONS: Place greens in a large serving bowl along with cucumber, radishes and herbs. Season with a tiny bit of salt & pepper. Toss together.  Add some sesame seeds if using. Whisk the dressing ingredients in a small jug until well combined. Drizzle the dressing over salad just before serving. Bon app! With love, Marie

Her perfect majesty – Panna Cotta

Panna cotta is always the right dessert.  Let me tell you why. It’s utterly simple. It literally means “cooked cream” and that’s all it really is. And yet it tastes luxurious and looks beautiful. It’s very easy and quick to make. And yet it will look remarkably elegant on any dinning table. It’s perfect for everyone. It can be tailored to your preferences. It’s always gluten-free, it can be low-sugar or no-sugar, and even vegan. And I just love the feel of velvety smooth panna cotta with fresh berry topping melting in the mouth. It’s absolutely delicious! Convinced yet? Give it a try! Preparation time: 30 min + Chilling time  /Serves: 4 For the panna cotta: 6 tbs. of water 1 envelope of powdered gelatine 300 ml of double cream 250 ml of milk 2 tsp. of caster sugar ½ vanilla pod or couple of drops of vanilla extract For the sauce: Handful of berries (raspberries & blueberries) 2 tsp. of caster sugar     DIRECTIONS: Use a small bowl to sprinkle the gelatin over the cold water. Delicious Focaccia bread with cherry tomatoes

I am absolutely in love with Italian food and focaccia bread is a beautiful superb accompaniment to go with it. It looks great, it tastes amazing and what’s important is super-easy to make. See for yourself! Preparation + cooking time:  over 2 hours We would need: 500 g of strong white bread flour 1 sachet of dried yeast 400 ml of lukewarm water fine sea salt olive oil Handful of cherry tomatoes Italian herbs Leftover cheese (optional)   DIRECTIONS: Place the flour into a large bowl, add 2 tbsp of salt and make a well in a middle. Fill it with the lukewarm water, add the yeast. Allow few minutes for the yeast to melt, then mix the entire content to make a soft, slightly sticky dough. Take a baking pan and drizzle some olive oil to the bottom. Pour the dough into the pan and spread it evenly. Cut the tomatoes and assemble them over the top. Tangy carrot & red cabbage salad

If it is a Gray and rainy day outside, just as one I had today, you will find this incredible easy-to-make salad very much enjoyable. It’s a perfect healthy snack as well as a great side-dish for any burger or sandwich. Colourful, crunchy and fresh with lovely lime juice tang, a definite mood booster. Serves 2 / Preparation time: 10 min / Veg-friendly We would need: 1 carrot, cut into thin sticks or grated 1/8 red cabbage, finely chopped 1/2 small red onion, finely sliced handful of mint leaves handful of coriander leaves handful of toasted peanuts, roughly crushed For the dressing: juice of 1 lime 1 tbsp of groundnut oil some chilli flakes to your taste 1 tbsp of soft brown sugar   DIRECTIONS: Tip the carrot, cabbage and onion into a bowl. Toss in mint&coriander leaves along with a crushed peanuts. In a separate bowl or a jar, combine the dressing ingredients together until the sugar has dissolved. Irresistible banana&chocolate cake

Banana&Chocolate a match made in heaven. This easy-to-make cake embodies all that – and then some more. A dense, dark and devilishly delicious, it will be gone before you know it. For perfect dessert you will need: 2 ripe bananas, mashed 100 g of dark chocolate, melted 150 g of butter, room temperature 120 g of  caster sugar 3 free-range eggs 175 g of plain flour 3 g of baking powder 1 tbsp. of vanilla extract 1 tbsp. of orange juice (optional) Tiny bits of orange peel for garnishing (optional)     DIRECTIONS This recipe consists of few easy-to-follow stages: 1. In a bowl or food mixer mash the bananas. 2. Melt the chocolate. Since I don’t have a double-boiler and prefer not to use micro-wave as it is very easy to ruin the chocolate, I simply melt it in a pot. A lovely summer starter: Nut coated goat cheese balls in bed of fresh home-grown salad

“Un fromage par jour de l’année” – (There is a different cheese for every day of the year, French proverb). From day one, I moved to Paris, I felt in love with cheeses. And trust me, it’s a great place to be for a cheese-lover. French have deep-rooted culture of cheese and more than a thousand cheeses in their lexicon. One of the cheeses, I learnt to appreciate is fresh goat cheese. Incredibly light and soft as snow, it tastes lovely with a rustic toast and is great in salads. If you are craving for a luxurious bite, and only have a few minutes for cooking, it’s just the right recipe for you. INGREDIENTS: 400 g of fresh goat cheese 2-3 spoons of natural yoghurt 4-5 spoons of crushed nuts (pistachio, pecan, almond) A pinch of salt Some pepper DIRECTIONS: 1. Crumble cheese into a large bowl and a roughly mash with yoghurt and season to your taste. If the mix is too dry, you can add more yoghurt. Endless love for pancakes

These American style pancakes are my all time favourite comfort food. Absolutely delicious and a complete breeze to prepare. For simple breakfast-wizardry you would need: 2 cups of plain flour 1 heaped tablespoon of baking powder A pinch of salt 2 tbsp. of sugar 2 eggs, lightly beaten 1 ½  cups of milk 2 tbsp. of melted and cooled butter, plus extra for cooking DIRECTIONS: 1. Sift the flour, baking powder, salt and sugar into a large bowl. In a separate bowl or jug, beat the eggs, then whisk in the milk and stir in 2 tbsp. of butter. Pour in this mixture into dry ingredients. Beat well until the pancake batter is smooth. Afterwards, let it stand for a few minutes. 2. Put a large pan over medium-low heat and add a knob of butter . Once that melts,  it’s time to put our batter onto frying pan. You can make these pancakes big or small, depending how you like it. Heavenly mushroom and zucchini omelette

Each and every one of us have their own little favourite thing to do, something which we always look forward to. For a number of years, for me such thing is a Sunday morning “royal” breakfast. It is not just a regular meal, it is rather a time-spending when you can slow down and relax, prepare something amazing and share it with your family and friends. And today’s the star of the table is this beautiful mushroom&zucchini omelette. Elegant and easy-to-make, it will make a great entrance for any lavish breakfast table. You would need: 8 eggs 300 g of zucchini, cubed 150 g of button mushrooms, sliced 50 g of parmigiana cheese, grated 150 g of mozzarella or feta cheese, sliced 2 medium onions, chopped Some salt and pepper (to taste) Some olive oil DIRECTIONS: Start off with slicing zucchini into a small cubes, chopping the onions and mushrooms Heat the oil in non stick pan, add the vegetables and cook until they are soft and start turning golden.
