Blissfully delicious: Coconut milk pancakes

A fun twist on pancakes: these fluffs are made with coconut milk and served on a bed of black cherry home-made jam, topped with maple syrup drizzle. A soft sweet piece of heaven. Preparation + cooking time: 15- 20 min / Serves 2 We would need: 1 ½ cup of plain flour 1 heaped tablespoon of baking powder a pinch of salt 1 ripe banana, mashed 2 eggs 1 cup of coconut milk a little oil or butter for greasing the pan DIRECTIONS: In a large bowl, combine together flour, baking powder and pinch of salt. Make a well in the center, add mashed banana, eggs & coconut milk. Whisk to a smooth batter. Cook on a non stick pan over medium heat for about 1-2 minutes per side. Serve hot with jam, syrup or whipped cream if you like. Bon app! Chocolate-chip cookies

Cookies are my favourite food gifts, wrapped in a paper bag and tied with a ribbon, they will surely make someone’s special day better. Meet my mini-cake cookies,  thin & crispy on the outside, filled with tasty bits of  dark chocolate and most importantly, extremely easy-to-make. If chocolate is not your thing, you can experiment with a whole world of different flavours. Roasted nuts and dried fruit will definitely make a nice twist. Makes about 25-30 cookies We would need: 250 g of butter, diced 1 cup of golden caster sugar 2 eggs ½ teaspoon vanilla extract 2 and ½ cups of flour 1 tsp. of baking powder a pinch of  fine sea salt 150 g of quality chocolate (milk or dark)   DIRECTIONS: Beat together the butter and sugar until smooth and creamy. Add in the eggs one at a time and stir in the vanilla extract. Sift in the flour, add a baking powder and a pinch of salt. Stir well. Lastly, roughly chop and stir in the chocolate. Delicious Focaccia bread with cherry tomatoes

I am absolutely in love with Italian food and focaccia bread is a beautiful superb accompaniment to go with it. It looks great, it tastes amazing and what’s important is super-easy to make. See for yourself! Preparation + cooking time:  over 2 hours We would need: 500 g of strong white bread flour 1 sachet of dried yeast 400 ml of lukewarm water fine sea salt olive oil Handful of cherry tomatoes Italian herbs Leftover cheese (optional)   DIRECTIONS: Place the flour into a large bowl, add 2 tbsp of salt and make a well in a middle. Fill it with the lukewarm water, add the yeast. Allow few minutes for the yeast to melt, then mix the entire content to make a soft, slightly sticky dough. Take a baking pan and drizzle some olive oil to the bottom. Pour the dough into the pan and spread it evenly. Cut the tomatoes and assemble them over the top. Wonderful smoked salmon&green beans savoury tart with Parmesan crust

Rich and tender pastry along with a melange of harmonious savoury flavours…a real treat! Sliced up and served with a salad makes it a delightful main course for your weekday suppers or even family get-togethers. I am so excited to share this recipe with you! INGREDIENTS: 250 g of wheat flour 1 tsp. of baking powder 100 g of butter, cold and diced; and some more for baking 5 tbsp. of cold water 1 medium onion 100 g of green beans 100 g of smoked salmon 2 eggs 75 g of Parmesan cheese Salt and pepper to the taste Some tomatoes (for garnishing) DIRECTIONS: First the pastry: Sift the flour into a large bowl, add baking powder and a good pinch of salt along with the diced butter. Irresistible banana&chocolate cake

Banana&Chocolate a match made in heaven. This easy-to-make cake embodies all that – and then some more. A dense, dark and devilishly delicious, it will be gone before you know it. For perfect dessert you will need: 2 ripe bananas, mashed 100 g of dark chocolate, melted 150 g of butter, room temperature 120 g of  caster sugar 3 free-range eggs 175 g of plain flour 3 g of baking powder 1 tbsp. of vanilla extract 1 tbsp. of orange juice (optional) Tiny bits of orange peel for garnishing (optional)     DIRECTIONS This recipe consists of few easy-to-follow stages: 1. These American style pancakes are my all time favourite comfort food. Absolutely delicious and a complete breeze to prepare. For simple breakfast-wizardry you would need: 2 cups of plain flour 1 heaped tablespoon of baking powder A pinch of salt 2 tbsp. of sugar 2 eggs, lightly beaten 1 ½  cups of milk 2 tbsp. of melted and cooled butter, plus extra for cooking DIRECTIONS: 1. Sift the flour, baking powder, salt and sugar into a large bowl. In a separate bowl or jug, beat the eggs, then whisk in the milk and stir in 2 tbsp. of butter. Pour in this mixture into dry ingredients. Beat well until the pancake batter is smooth. Afterwards, let it stand for a few minutes. 2. Put a large pan over medium-low heat and add a knob of butter . Once that melts,  it’s time to put our batter onto frying pan. You can make these pancakes big or small, depending how you like it.
