Her perfect majesty – Panna Cotta

Panna cotta is always the right dessert.  Let me tell you why. It’s utterly simple. It literally means “cooked cream” and that’s all it really is. And yet it tastes luxurious and looks beautiful. It’s very easy and quick to make. And yet it will look remarkably elegant on any dinning table. It’s perfect for everyone. It can be tailored to your preferences. It’s always gluten-free, it can be low-sugar or no-sugar, and even vegan. And I just love the feel of velvety smooth panna cotta with fresh berry topping melting in the mouth. It’s absolutely delicious! Convinced yet? Give it a try! Preparation time: 30 min + Chilling time  /Serves: 4 For the panna cotta: 6 tbs. of water 1 envelope of powdered gelatine 300 ml of double cream 250 ml of milk 2 tsp. of caster sugar ½ vanilla pod or couple of drops of vanilla extract For the sauce: Handful of berries (raspberries & blueberries) 2 tsp. of caster sugar     DIRECTIONS: Use a small bowl to sprinkle the gelatin over the cold water. Endless love for pancakes

These American style pancakes are my all time favourite comfort food. Absolutely delicious and a complete breeze to prepare. For simple breakfast-wizardry you would need: 2 cups of plain flour 1 heaped tablespoon of baking powder A pinch of salt 2 tbsp. of sugar 2 eggs, lightly beaten 1 ½  cups of milk 2 tbsp. of melted and cooled butter, plus extra for cooking DIRECTIONS: 1. Sift the flour, baking powder, salt and sugar into a large bowl. In a separate bowl or jug, beat the eggs, then whisk in the milk and stir in 2 tbsp. of butter. Pour in this mixture into dry ingredients. Beat well until the pancake batter is smooth. Afterwards, let it stand for a few minutes. 2. Put a large pan over medium-low heat and add a knob of butter . Once that melts,  it’s time to put our batter onto frying pan. You can make these pancakes big or small, depending how you like it. Pretty in Pink: Raspberry & Banana pudding

“You eat with your eyes first”, I bet most of you have heard this expression at least couple of times before. Good news there are plenty of ways to make all your senses happy. Whizz your gorgeous pink breakfast for a good morning start. Silky with a nutty spin, accompanied by bits of dark chocolate and a hint of mint. Delicious!  I must say – it’s super easy to make,  and my family loves it. Preparation time: under 5 min / A petit treat for 2/ Veg-friendly We would need: 1 medium banana, sliced Handful of raspberries 3 tsp. of nut granola 1 tsp. of honey 1/2 cup of almond milk (can substitute by  regular milk, soy or rice milk) Topping: Add berries, fruit, nuts&seeds, whatever you like. On the picture: banana slices, raspberries, goya seeds, bits of dark chocolate, almond flakes and mint leaves. DIRECTIONS: In a blender combine banana, raspberries, granola, honey and almond milk.
